Yup, definitely can get around with a truck but there may not be anything you can do that's too extreme. Doesn't mean you can't have a good time.
The suggestions above are great. Nanaimo Lakes is great, you can check Mosaic's website for gate hours. The hump in Port Alberni, maybe called Loon Lake Road is another gate worth driving around, lots back there (I think that leads to Mt. Arrowsmith) You can also grab a backroads mapbook from a Canadian Tire or gas station and just see where it takes you.

You can still enter the long way around through Mosaic's NW Bay Logging Road gate in Nanoose. Lots to explore in there anyway.
